The 2016 vintage was a brilliant one in the Swan. Weather conditions were ideal leading up to harvest and a beautiful fruit set earlier on in the season gave us great flavor in the vineyard. Hand harvested fruit picked at its optimum was lightly pressed off and cold settled. Upon start of fermentation, the juice was transferred to a combination of new and second use French oak barrels. Once fermentation was complete the wine was left for eight months with regular lees stirring to build complexity in the wine.
The wine opens up with cashew hints, white peach note and a lifted citrus burst. Great complex notes in amongst this lovely flinty and limey expression. The wine has this lovely fine structure with some vibrant acidity which then leads toward the beautifully rounded, rich, soft and long finish. There is a lovely underlying lemon zest character that completes this seamless energetic wine.
